    I've also been leaving mine with the S-05 for three weeks then kegging, usually between .006-.008, I cold crash the last couple days and its almost crystal clear after a couple days even without geletin.

    You won't even think it's the same beer, the difference between Notty and S-05 is amazing, S-04 is more like the Notty but I like the 04 better than the Notty, S-05 is dry, crisp, bigger mouth feel.. Cheers

    I've been using S-05 for the last 6 - 8, 10 gal. batches, I've left it in primary for 14 days then kegged, FG is always 1.004, I think this yeast perks fairly hard the first few days then continually slows, I've never really seen much activity with this yeast, many times I've wondered weather...

    Hey BrewerE and jwalk, Hows the s-04 compare to the s-05? I've brewed 8-10, 10gal. batches of this with s-05 and love it, used Notty a couple different times, don't like it nearly as well, brewd again this past wkend and had to use s-04 in 5 of the 10 gal just wondered how i'm going to like...

    I like S-05 much better as well, it's dryer, crisper, more lager like, big difference in taste between Notty and the S-05. Cheers
