    Sour dregs saving ?'s

So I have not had a response back from D9 regarding what their processes may be. Disappointing to say the least. But I thought of a question regarding sour dregs. Out of curiosity from a single dreg turning it into a starter how many steps would it take to be able to pitch that single dreg...

    Sour dregs saving ?'s

I wrote back asking if they would be willing to share more information about their process. I'll share what I hear.

    Sour dregs saving ?'s

So D9 wrote back and said they do not pasteurize their beer but do to other processes their beer is not suitable to be used for cultures. Thought I'd share the feedback.

    Sour dregs saving ?'s

Does anyone know about D9 Fanatical Brews in Cornelius, NC? Can their sours be used for dregs? They are not on the Mad Fermentationist list but I think they are fairly new. I bought a bottle and am hoping to use the dreg. Any feedback would be great. Thanks.

    Donation jar

Being that I am beginner Brewer, I have been giving a lot of my beer away. Mainly because I want honest feedback from as many people as possible. All I have been asking for in return is that people save and give me bottles. There's no bottle deposit in NC, so it doesn't cost them anything. My...

Left beer on yeast cake for 4 months....what to expect?

It's already in bottles. Bottled 1 week ago. Sat in primary for 4 months. Tasted it at bottling time, did not taste like this.

Left beer on yeast cake for 4 months....what to expect?

Sounds interesting. Would be interested in hearing how it turns out and how it does at competition. So I got impatient and tried a bottle after one week. No smell at all and a strong cough syrup taste. I poured the glass out. Looking in my copy of 'How to Brew' I don't feel like it really...

    First Sour.....Over my head?

Looks interesting, I may have to consider that recipe. Though hop quantities were not listed, just the AAU values. Were these aged hops?

Left beer on yeast cake for 4 months....what to expect?

As I said I wasn't purposely leaving it there. My work schedule from August-mid November is 7 days/week 70-80 hrs/week. Thus the reason the beer never got transferred. Learning a lot very day though. Just out of curiosity, how long has your 12.4% ABV barley wine been aging/fermenting for...

Left beer on yeast cake for 4 months....what to expect?

I put one in the fridge yesterday after one week of conditioning. Figured I would give it a try at different variables to see how it changes and try to learn more about that process.

    First Sour.....Over my head?

I live in Fayetteville, NC. There are a couple good bottle shops in town, but I typically go to Raleigh or make an excuse to drive to Asheville if I want to drink real good beers. Nothing like my real hometown of Portland, OR though. Good to know. Theoretically though couldn't I just bump by...

Left beer on yeast cake for 4 months....what to expect?

This was my first attempt at a barley wine. I brewed it in August with the idea that I was not going to get the opportunity to brew again till now, so it did not matter if it tied up my equipment. Thus dictated by my work schedule. There lies the reasoning for not aging it longer. My next...

    First Sour.....Over my head?

Good advice, thank you. I have a standard 6.5 gallon carboy, so I should be set there. I might need to start collecting dregs. I rarely buy bottles of sour beer, primarily enjoy them at the brewery. That may have to change.

    First Sour.....Over my head?

Haha...coincidence. I just came across this recipe right after I posted the thread. It mentions that the hops were aged 7 years. Is it possible to buy aged hops?
