    FT: Westleveteren 12

Hi Guys and Gals, Just got back from master brewer training in Munich and I picked up some goodies along the way. One of those baubles is a lovely bottle of Westleveteren 12 that I am willing to trade for the right offer. Get at me folks! :mug:

    Goodbye, and Thank You

Hi Everyone, I have had a blast shooting the chit with you on this forum over the last few years. I am leaving my job at the LHBS now to pursue my dream; I start classes at the Siebel Institute Master Brewer Program next week and I couldn't be more excited. You have been awesome, and you...

Weird ABV calculation, need to call in the big guns

So I brewed a Midas Touch clone and there were some mid-fermentation additions that changed the gravity a lot. O.G. 1.082 F.G. 1.023 THEN I added a quart of unfermented white muscat grape must which raised the gravity to 1.040. I fermented that and it finished at 1.020 This seems...

TF&S Optic Malt in Commercial Beer?

I'm at a total loss here so I am reaching out to the best beer experts I know, the fine folks in the HBT community. I am brewing a SMaSH with Thomas Fawcett's Optic Malt tomorrow and I am looking for some commercial examples of beers that use it. Does anyone know of any commercial beers...

HBC 438 / Malting Co. of Ireland SMaSH

I'm brewing a SMaSH today using Stout Malt and that new HBC 438 hop that was presented at NHC. I have no experience with Stout malt but got 20 lbs. to play with for free so I figured I would do a SMaSH first before building a grain bill for a stout with it. The HBC 438 hop is really cool, it...

    Big Brew Killer Kolsch

I'm trying to get my shop ready for Big Brew and one of the recipes is "Killer Kolsch." It calls for RO water treated with 1/4 tsp 10% phosphoric acid per 5 gallons. I have absolutely no experience with phosphoric acid and none of my vendors carry it. Can I just substitute lactic acid? Does...

What would be your ideal LHBS?

Hi Everyone, As some of you know, I run a LHBS in Northern Illinois. This is not a plug for that shop. I am honestly curious what the HBT community likes and dislikes in their local homebrew shops. In an effort to improve my store (and find out if I'm doing anything that annoys people) I...

I'm Brewing a Weird One Today: Maple Sap Beer

Ever since reading about using tree sap as brewing water over a year ago I have been dying to try it. Yesterday a customer brought me 10 gallons of maple sap he harvested in his back yard and I swapped him a new fermenting bucket for it. My grain bill is: 12 lbs pale 2 lbs cherrywood...

Mong's Blood Beer - How To?

Alright so I just read the great Brew & A with @mongster (https://www.homebrewtalk.com/brewer-interview-Stian-Mong-Mongster.html) and he mentioned that he wants to brew a blood beer. First off, that's metal as f*ck! Awesome dude! But it got me thinking, could this be possible, and what would...

    I committed the Unthinkable

I just took a HUGE dump, and around ground turd zero I realized I had nothing to read and my phone was on my charger. All I had to think about were the HBT posts of the day, and the "Ladies Touch" one was foremost on my mind. It definitely helped my bowel movement, hopefully @homebrewdad isn't...

So I'm brewing an all-rye beer today...

I'm thinking of calling it "Rye Not?" I wanted to brew something weird, and then it hit me. How about an all rye beer? Hmmm. So I decided to use every rye we have at my shop and a buttload of rice hulls. So, my grain bill was this: 11 lbs Briess Rye 3 Lbs Weyermann CaraRye .5 lbs...

    Anyone seen this before?

It's an altbier with 1007 fermenting at 60*F. I know it's a hybrid style but yeesh! I didn't expect it to ferment exactly between top and bottom. Is it a lager? Is it an ale? No, it's an altbier!
