What do you do with bad beer?

I sell mine to Mr. Beer for their recipe kits

I live in Area 51, so take a guess :)

    Coopers Cerveza

This one ages well and really improves over time.

Can I turn a Mr. Beer Recipe Kit into something useful?

This is one of the weakest flavored MB kits. It definitely needs hops and I would add a pound of light DME and steep some Carapil grains to enhance flavor.

    Cooper's Lager kit tasting fruity?

The yeast Cooper's and their subsidiary, Mr. Beer, uses does give a fruity flavor. I have had it go away after five to six weeks of bottling conditioning. Using a different yeast is the key. The US-05 seems to be everybody's favorite, but I've used Munton's ale yeast, which is very...

Too much water in Muntons old Ale

The Old Ale makes 12 pints, which is a gallon and a half. Mr. Beer makes 2.1 gallons so it might be a bit on the weak side.

    Beer is very bitter

Even if it's too bitter after the beer is fully conditioned just set it aside and let it age for a few months. Hop bitterness fades with aging.

    Extract kits in a can?

Thanks grasshopper. The one I brewed that had a slight fruity taste was fermented at 22 deg so I guess that explains it. The taste did dissipate after two months conditioning.

    Extract kits in a can?

Is the Cooper's yeast fruity like Mr. Beer's? Just wondering if they use the same yeast since they're the same company.

Used Mr. Beer to catch the bug now I want to move on.

An all grain set up is expensive and requires a burner that you can operate outside. Modern stoves can't reach the temperatures required for all grain brewing. Not trying to throw ice water on your parade, but if all you've done are Mr. Beer then you should move slowly one step at a time and...

how do you mimize that 'extract twang' flavor?

i brew extract and have never had the twang. Brewers tell me it comes from not using fresh ingredients. Use fresh grains and LME and select a good yeast. Pitch it at the correct temperature and keep your fermenting temps consistent. Stressing the yeast during fermentation is one of the...

    What's the difference?

A lot of folks will tell you all grain tastes better, but I've brewed beer from canned kits that have blown people away, including my neighbor who is an all grain brewer. As far as control goes, I can take a canned kit add steeping grains, hops, minerals to the water and change the yeast...

The five things old homebrew me would pass to new homebrew me:

Coopers and Mr. Beer offer plastic 6 gallon fermenters that you can see through. I would add, keep a journal of each brew. You do have a lot of control over extract brewing like changing the type of water and yeast used. Plus you can tweak recipes by adding steeping grains and/or hops...

best price on extract these days?

Second checking with your local store. My store has prices that match the lowest I've found online. Plus I don't have to pay for shipping so I'm really saving a lot.
  16. M42

    No More Carboys!

    I like the Speidels.

    What's in your fermenter(s)?

Just bottled an Oktoberfest - I know, I'm late. But I have two going now - an amber ale and a Mexican Cerveza. When those are finished I'm going to brew up some dark ales and porters for the winter season.

Trip to North Carolina in a couple of weeks

All good suggestions for your trip. But it's too bad you aren't coming west and visiting Asheville. 15 microbreweries in the city with more in the surrounding counties and they're all excellent! :)

    Western NC?

Looks like there are a lot of folks in the western part of the state here. We should look at forming a regional brew club. I would like to chime in about one of the brew supply stores in Asheville. Asheville Brewing has been in business for 20 years and their prices are as good as any of...
