    BIAB Basket

Hey, man. The guy just said he'd seen that *myth* propagated often. You asked him for a single link or post where that was the case, and he provided in spades. I don't think he's arguing the case that squeezing the bag is actually harmful, and he certainly ponied up to your request. Maybe...

    Pumpkin Ale vs Winter/Christmas Ale

"Christmas flavors," in my mind, at least, will rely less on the nutmeg and cinnamon than "fall flavors" might. You can still include cinnamon, but go lighter on it. Instead, up the clove and ginger (do people include ginger in their pumpkin beers? I wouldn't...) and add orange peel. You...

    Coconut Kava Stout

This might be kind of avoiding the question, but what if instead of brewing with it directly, you brewed the beer you were planning on (coconut stout or otherwise) without the kava, and then just used that beer in place of water when cold steeping your kava drink? I know the kavalactones are...

    home brewers going pro

To be fair, I don't think opening for 3-4 hours every other weekend is what must of us have in mind when we think of "very successful" microbreweries. That's just not enough business to be really self-sustaining.

All brews have syrupy aftertaste. Please help?

It sounds like his fermenters are inside of a chest freezer for temperature control. Their only light exposure is from blue leds on the fan, which he's disconnecting just in case.

    Orange zest...

While I'd recommend just zesting them right before use, you can store orange zest or orange peel in your freezer with no issue. Just bag it up and squeeze most of the air out.

    Bourbon!!!!

You're exactly right. I just meant to convey my impressions from the evening. Hell, not only didn't I see eye-to-eye with all of my friends, I might not even see eye-to-eye with myself if I tried it again.

    Chocolate mint stout concerns

What kind of sugar did you use to carb your bottles? How long did you ferment before bottling? If you carbed with malt extract, there are some proteins and stuff in there that can precipitate out during carbing, although you have kind of a lot. Maybe it's from the baker's chocolate. Did...

how much is too much? cocoa nibs

I have never, ever seen the nibs sold unroasted. It is almost always the case that the beans are roasted before winnowing. Some chocolatiers or brewers may elect to roast their nibs again, but I don't know of any source of winnowed, unroasted nibs.

Add cold brewed coffee to secondary or right to keg?

I think it will be subtle but you will notice it. I like to add two cups, but I also really like coffee.

    Dear lord someone help me

The moral of the story is here that if you stick with this hobby, you're eventually going to make some much bigger mistakes. When's next brew day? ;)

    Dear lord someone help me

Worrying about missing your hop addition mark by *1 minute* is silliness. If you're really concerned you can always just boil for a minute longer, ya know? You definitely pitched your yeast a little warm, but they're probably fine. Enjoy your first brew :)

    Split Boils

How to Brew has been my primary resource so far, and if that's true, I stand totally corrected. Sorry for any misinformation.

    Bourbon!!!!

I recently got a few friends together for a blind bourbon tasting (which turned into more of a whiskey drinking as the night went on, but I digress...) I brought Elmer T. Lee (a commemorative single barrel offering from Buffalo Trace, I recommend it if you can find it), my buddies brought over...

    Brewing with Wasabi...

I'm excited to hear your results if you go through with this. If your lager works out, I may try a wasabi IPA at some point. I think the pineyness of some hops could play well, and it'd be a great summer+sushi drink.

    Need some roasting advice

It sounds like you like your beans exactly where I like mine. Maybe I should get into roasting...

    Another kettle question

I also use that granite ware canning bath. When bringing 3+ gallons of water to a boil, it's going to take forever no matter what, but the bottom is pretty funky. It also makes cleaning and scraping the bottom to prevent scorching more interesting. Still, it holds enough water. There's this...

    Brewing with Wasabi...

Well, the flavor is quite different. Since I doubt you need a lot for inclusion in beer (you want to be able to swallow the stuff) you can get a moderate amount for like $15, if you're willing to use a dried variety. http://shopping.netsuite.com/s.nl/c.493062/sc.2/category.2/.f I can't find...
