First BIG Brew - Recipe Help

So the secret is out. I won an awesome raffle prize and got to brew 300 gallons on a 10 barrel pilot system at Harpoon Brewery in Boston. I decided to go with a Honey Brown, an often overlooked classic style in today's microbrew landscape. Read more here...

First BIG Brew - Recipe Help

And I mean big, 300 gallons big. So this is a long story, but for now I really need some help at least starting to craft my recipe, unfortunately this is over my head so I can only speak in 5 gallon language and 5 gallons is very forgiving, the last thing I want is 300 gallons of swill. This...

    All Grain basic questions

I boil a tea kettle when I start heating up my strike water. Throw that into the cooler once it boils and shake it around a bit, then dump it right before I dough in the mash. I seem to hit my temps easy this way, though my efficiency doesnt seem to show it.

Apricot Flavors from Grains or Hops

So I have recently had a few beers that had this slight apricot flavor to them and I dont think its from apricots. Specifically Moat Czech Pilsner and Otter Creek Copper Ale, and more so in the pilsner. Can this type of flavor be attributed to a certain brewing grain or perhaps a hop...

Amount of water to put into mash and sparge?

Taken from the sticky in the partial/AG forum: https://www.homebrewtalk.com/f36/attention-new-all-grain-brewers-30466/ You need to use 1 to 1.25 qt. per pound of grain in your mash, then about 1/2 gallon per pound when you sparge it. I tried the same method you are gonna do, it worked...

    Clarity through Jell-o (pic)

So I tried using some Jell-o in my lates cream ale. Added for the last week in the secondary. 1 Tbsp of a Knox packet, let it sit in a pot of lukewarm spring water (about 1/2 cup). After a few min, brought it close to boil, stirred. Then just poured it in the secondary. Here is a pic I took on...

    Bottling Tips for the Homebrewer

Here's my set-up, havent made the spigot yet but will before the next batch.. I use an old water bottle for a bucket, it is a pain, but it was $5. I have a gravity bottle spigot hooked up with a short piece of tubing, this allows me to flex it and fill the bottles at a bit of an angle to...

    Dry hopping

Woah. That sounded cool. Also by this point your wort is now mostly beer and the alcohol is usually strong enough to kill bacteria, like the bacteria in the unsanitized bag you used to put your hops in. Or your fingers.

Need a Used Corny near Boston??

Found an ad on Craigslist and turns out its a company that sells refurbed equipment. One for $20 more than one is $17 a piece plus 5% mass tax. You have to pick-up though. So if you live near Boston and can get to Jamacia Plain between 8a-4p during the week, go check them out. They claim to...

If I knew then, what I know now.....

So I'm going to get into kegging my beers with some tax return money. I really want the convenience of kegging rather than washing and storing bottles. I'm actually going to attempt this as a space saving option. I'm looking to make cold storage for 2 5gal cornies. A nice tap is not very...

My first time using a yeast cake

I have been wanting to do this myself and after a bit of HomeBrewTalk reading I tried it last night. I made 2.5 gallons of Nut Brown Ale wort and crash cooled it in an ice bath. I then added 2.5 gallons of room temp spring water to the brew pot, its in one of those big jugs with the spout so...

    Anyone in southern MA?

Homebrew Emporium Lineup I go to their Cambridge location. Guy usually has a few cornies he's working on in the shop.

    Hi from CT

Welcome Mike! Originally from Durham, CT. Pretty sure there is a big Wine & Beer Homebrew store in or near Hartford if you are ever in that area. You can always make some orders with the many online vendors. (I'm partial to NorthernBrewer, but Austin Homebrew Supply is also very popular on...

    Hard Lemonade Malt Beverage

We are on 14 days in the primary now, roughly 12 since activity began. The "beer" has finished much drier then I thought fermenting close to 1.000-1.005. I sampled it and I'd say she is close to done. With a nice carbonation bite to her I think she will taste great. I will sweeten at least half...

    JFT Pale Ale (Extract)

Cracked one open (had to taste it), its a shame that I really enjoy hoppy beers so much more seems how hops are so pricey. Color is dead on for what I was looking for, a light orange amber color. The flavors will come together smoothly and I think this will be a staple for me. I will try it...

    Norther Brewer (yeast option changes)

I think Northern Brewer has changed their kit purchasing options online. Now you can choose to have no yeast, dry yeast, or the wyeast smack packs (they all used to come with these). This has really made some cheap kit options available.

    Northern Brewer Nut Brown Ale

This has conditioned for over a month now and does get better with age, the SWMBO now likes it quite a bit. Everyone who tries it has trouble believing its a homebrew and my boss says he likes it much better than Newcastle which is a compliment. Highly recommended kit and company.

    Centennial Lemon Blonde (Extract)

Thats interesting man... I heard rumors about a hard tea malt beverage recipe, but havent been able to locate it on the board. Its been about 3 weeks now for this beer in the bottle, I added gelatin after a week in the secondary, but did it like an idiot (I'll spare the details) and ended up...

    Hard Lemonade Malt Beverage

Brewssuds: Did you sweeten your batch? Im curious how it came out with the champagne yeast. The Yeast/sugar idea was mentioned in one of the threads I researched so I can't take credit. There are probably sweeter yeast options, but this is just the one I have been using and have on hand...

    1st Lager (problem)

I like lagers....but can't brew them in the summer :( conditions are just plain too warm, stick with the ales at those temps for the future, or try a California Common recipe. Keep the temp as cool and steady as possible. If you really want to keep brewing lagers you will need a fridge to use...
