    OK thanks. How did you calculate your IBUs? 'cos on the recipe it looks like 89.5 IBUs with your two FWH additions, but you have put 54 in. Sorry if I've miscalculated somehow. Anyway, if it's 54 IBUs, that would be a bitterness ratio of 0.74, with 0.85 being typical for an American Barleywine...

    1) Please tell us the estimated OG, FG, ABV, SRM and IBUs. 2) What style is this? American Barleywine? 3) What temperature will you mash at? 4) What are your plans for fermentation? I like the look of the recipe, overall. 23% rye malt will give a lot of rye flavour. Is that what you want?

    Hope this isn't too much of a hijack. I'm gonna make a 5%abv APA with 80% maris otter, 15% rye malt and 5% crystal wheat. US04 yeast. I'm hopping with columbus but not sure what hop to pair it with. Cascade? Simcoe? Something else?

    Happy accident for sure! As has already been suggested, upping the sugar and mashing long and low would give you the best chance of balancing out the strong malts. Maybe check the attenuation of your yeast as you'd want this to finish as low as possible.

    When I sparge (which is rarely) I rest my grains in a big colander resting on the top of the kettle, and ladle the hot sparge water (165f sounds about right) over. Then I give the bag a little squeeze and discard the spent grains.
