the BJCP so called certification drives me crazy

for what it's worth, I don't worry about the "fair/good" labels as I don't think the words meet the description used to the right of the score ranges. In my opinion 0-13 is basically Awful, 14-19 is Problematic, 20-25 are generally Fair, 26-32 tend to be Good/Solid, 33-38 Very good. Or...

    NHC / NHBC 2020

New England IPA continued to get way more popular after the 2015 update, and we put out that guideline to make clear where people were supposed to put it after getting the question hundreds of times. Enter it in 21B with the Specialty Information "New England IPA" or call it New England Session...

    Treetop “Cosmic Crisp” unfiltered cider

That's a great OG if accurate. Getting almost 8% out of store-bought juice will generally help with making a clean cider. I'd still be looking for more characterful apples to supplement with, but it could be a good base for those without access to many cider apples. We'll see. There's been...

    Too sweet

This is very late, but... 3 lbs of honey plus one gallon of water will give you ~1.082 OG. If OP meant one gallon total volume (quart of honey, 3 quarts of water), it'd be more like 1.103. To get 1.130 you'd need a gallon of water and 3 lbs of white sugar, basically. Thus if it is still very...

    Homebrew Con 2020 Nashville

it depends on the year/location/laws, actually. In Portland, for instance, there was a Homebrew Side and a Commercial Side in the Homebrew Expo/Social Club, with people reminding you not to take your beverage from one side of the tape to the other. Silly, but ya gotta find a way to obey whatever...

    Homebrew Con 2020 Nashville

the major events won't change times. The "General Schedule" on the homebrewcon website at least is for '20, not last year. https://www.homebrewcon.org/lineup/general-schedule/ These things don't change that much and are fairly dependable for those trying to figure out their travel schedule. For...

    2020 National Homebrew Competition

Apparently there was a lot of "I NEVER SAW THE EMAIL!" complaints, despite the warning that the application time was coming, then that it was open, and then that it was closing soon, AND that there was no need to depend on email if you were paying any attention to their website. But, whatever...

    2020 National Homebrew Competition

I really should not discourage anyone from entering whatever the heck they want, but in my opinion, this is the one you enter when you want to win, i.e. recognition for something you already know is good...Not for feedback when you're wondering how to improve; you'll most likely be disappointed...

    Homebrew Con 2020 Nashville

yeah that was part of me missing Providence. The multiple day drives like I did for Portland are just a no-go anymore. And I've found I don't have a lot of fun if I don't have stuff to share, so I missed conf for the first time in a decade. Nashville is a single day drive, so I'm in...

    Your favorite cider flavor combos

generally, Yarlington Mill + Northern Spy + Golden Russet + Ashmead's Kernel + DV10 + Love... is my fave combo. ;) ...but in the spirit of the thread, I'll say: Ginger, lemongrass, and hibiscus cheers--

    Homebrew Con - Worth it?

I'm glad to hear OP had a good time. They offer good advice based on their experience too: You really can't do it all, so plan ahead. I was sorry to have to miss Providence and will see you in Nashville. I'll be found in the KCBM and AMMA booths on Club Night and have a seminar or two in...

Can you age a mead too long?

well I never said 15, to be fair. I haven't even been doing this hobby quite 15 years yet. And I would simply say I got better at keeping my yeast happy, and the resulting product was smoother and more drinkable, more quickly.

Can you age a mead too long?

as I've gotten better I generally plan to leave big sweet Polish meads alone for 2, preferably 3 years. The number was higher when I was less experienced.

    Pear vs apple cider

Did it taste like a dessert pear? Seckel and Forelle can be that small. Did they change color as they ripen? And, maybe this should have been my first question: Does it seem like something that was planted, recently or long ago, or are we talking a wild seedling? Because I've made my best perry...

    National Homebrew Competition 2019

3 of my 7 medals finished 2nd or 3rd in First Round, including last year's gold and MMOTY. So, in my experience there isn't much difference in the top 3.

    National Homebrew Competition 2019

There are no scoresheets done for mini-bos. It is a head to head tasting of several at the same time where the best per style advance.

    National Homebrew Competition 2019

Don't think I judged that one, but definitely did taste it in mini-bos. Nice job.
