    I lived on Pine Hill Drive. Girlfriend convinced me that "Pine Hill Brewing Company" would be a cool name. Had a buddy put together a logo and I can't help but say it has grown on me.

    Left the hops in for 6 days. Still smells delicious, but y'all were more than correct. A little chewy. The taste is fantastic... but I felt like the chewy-ness / thickness sort of killed my excitement for the taste. I definitely will be tweaking the recipe, but the taste wasn't bad at all.

    Thanks! We will see what happens... It's fermenting happily now. I guess I'll see how this tastes in a few weeks. I def. Think if I ever go with iipa again in going to stick with Simcoe/Amarillo/Citra. They are just too damn awesome. Hommell's Homebrew

    Newbie learning his lesson

    Sitting at a lovely 12% when racked to secondary. Now it will sit for about 3-4 more weeks and maybe it will get down a little farther to 13-14%. I dunno if I want something this sweet... but it is delicious.

    Tabasco is stored in charred white oak barrels. Apparently they sell this stuff. So I was thinking of using it to make a slightly spicy wood chip accent to a brown ale possibly. I am not married to that beer style but I think it would be an interesting mix of flavors. Maybe not... :confused...
