How long did it take you to go all-grain?

I did one extract, then partial for a couple. Then I was bought a fine extract kit by my daughter and the one after was partial. Now I am all grain. Just fermenting a Best Bitter. Two stage process as my kit isn't big enough for a full 5 gallons so do two 2.5 gallon batches. All takes time...

    A total experiment

This turned out to be very sharp and somewhat acidic, but not vinegary. Very dry and very very fizzy. Once cooled in a fridges this calmed down and was just about right. I completed a second batch and added some unfiltered but pasteurised juice. This added just a little more body and only a...

    A total experiment

So I ventured into cider making for the first time. I did away with all the peripherals and stuck with apples from my tree, a little sugar and yeast. I juiced the apples (15kg) and obtained a gallon of juice. Mixed in 250grams brown sugar, added a generic lager yeast as that is all I had...

    A cardinal sin?

We'll I have now bottled. I understand about the oxygen issue. I leads me to consider my beloved English cask ales which are drawn from the barrel. There is a balsa wood cork which you tap into the top to allow the beer to breath once tapped and also to reduce the vacuum when it is poured...

    A cardinal sin?

I have brewed a really nice amber ale (partial mash). My sin is that I have not bottled it yet. However I am pouring straight from the fermentor. The tastes are right what I was aiming for. Ok it isn't carved, I don't worry about that really. It is gin clear, full of flavour and we'll...

    Am I a homebrewer? NO!

I prefer the term craft brewer. Although on my CV I call myself a home brewer. I prefer craft because that is what I have started to do, craft beer. Or I simply brew beer at home, like I roast coffee at home or bale bread at home or grow veggies... Although as a silly title: A fermentables...

An unmitigated disaster worthy of praise...

Ok a week in and. Cracked open a bottle. Really really dark and cloudy. The mouthfeel is ok - a little thick. The addition of the hops really helped. It really s more stout than anything really. Looks very unappetising. I passed it to the wife and here are her comments: Really deep and...

Anyone haerd of these new Yeasts from Mangrove Jack's (New Zealand)

The burton union is the best hands down. It is the one I use most frequently. It adds aovely classic pe ale taste. Some fruity esthers with a touch of sulpher. It always takes 2 days to get going for me by when it does it goes mental. Clears very very well. Currently have a pale ale...

An unmitigated disaster worthy of praise...

I added 400g of sugar. What's that, just under a pound? I have measured FG again at 1005 Tasted the sample and yeah it was a reL "oh my gosh - that is good". At least know now just what crystal produces and I like it! I have found another supplier who has a lot of malts and is cheaper by...

An unmitigated disaster worthy of praise...

Ok did a gravity reading today and it was..... 1005 And the thing is still busy fermenting away. The taste was surprisingly ok. Very rich and sweet but the addition of zythos dry hops helped. Even the missus liked it I am a bit confused about the really low gravity given the OG. Thoughts...
