    Any chill option you are comfortable with is fine. I prefer a plate chiller and it's not hard to keep from clogging or get it clean (with the right cleaners and a pump). Keep in mind, commercial breweries use plate chillers. If you are emulating their beers or styles, use a plate chiller.

    You will get heat from your vessel and mass but, as thefost mentioned, you lose a lot of heat from a gas burner to the environment (aka your apartment). When we switched our 1Bbl system to electric the heat output drop was huge.

    Thermowell / probe grease?

    I use thermal paste ordered of amazon. It's typically used on computer chips and isn't food grade but it sits inside a sealed environment isolated from the tank interior by the thermowell. I have a couple of small tubes which will do a couple of thermowells each.

    modulating 4500w heatstick

    Thanks. I assumed it would work but this is the first electrical modification I will be making by myself. Had an electrician build the basic controller panel to my spec. I'm confident I will be able to sort out the connections for the secondary variable switch.
