It's for ventilating moisture specifically - not sure where you live but up here around Calgary/the rest Canada it's quite common.     For sure I agree with keeping it covered. I did have it covered, just took it off to take a temp reading and the quick picture. I was a little paranoid that a few of the neighbourhood cats could be potential 'off items' as you said haha.

    automated HERMS

    Just an update on the progress I've made. I have all the tops cut open (stainless is a Biatch to cut with a grinder - it took about 30 - 45 mins per keg) and I polished them up all nice with a wire wheel. Might end up going over them with an orbital sander - for some reason it wouldn't take off...
