    S04 (I've heard) tolerates warmer temperatures better than Notts. Any off flavours produced tend to be fruiter than the Notts produces. I'm using S04 in super hot temps (Mexican Caribbean hot) and as yet don't have a swamp cooler (not that one would do much good as the nearest ice/refrigeration...

    Still have bubbling in the Tea and plain cider. A thin, perfectly straight line of bubbles climbing the side of each one....still cloudy as well...when will they finish.....

    Up first the Still/cloudy and second the sparkling/not very clear...bloody delicious though..and a massive sense of satisfaction given that we got the juice out of the apples ourselves. Looking forward to the next batches..and seeing how this one ages.

    Substitute secondary fermenter - Water jug?

    The only drawback is that any yeast/fruit bits tend to deposit on the 'shelf' above the handle, so you need to shake/swish them every now and again to get that off. 'Cos if you rack with that there it gets sucked into the main body of liquid.

    Yep..that's what I use. I tend not to sanitise them. Generally just pour a new one into the jug that I've just finished. I figure they must ship them sanitised.

    I haven't checked it, I could have but I have an aversion to opening the bottles here...irrational probably. I've wrapped all three Saisons together in a sleeping bag and a fleece blancket to keep their temps up around 30C...I don't really want to unwrap them and make them cold again either...
