    Safbrew Abbaye

I brewed a Belgian dark strong with it....pitched at 64 and it launched like a rocket. Beer turned out great, as said above, clean Belgian esters. Bought 2 more packs to brew more Belgian inspired beers

    Yeast for Bottling RIS

I have used CBC-1 on bottle conditioned beers with great success. It is dry, cheap, easy to use, and leaves a nice carbonation. It is specifically made for this purpose

Do you sulfite mead (cyser) when you bottle?

I was thinking that myself.....or using potassium metabisulfite?

    Foundation Brewing Epiphany Clone

I would say Foundation is using London Ale III for Epihany. It wasn't too long ago Bissell came out and said they have changed their house yeast. I think they went from the conan strain to London Ale III because that is what their "neighbors" were using. I would think they are using some...

OFFICIAL Kate the Great Russian Imperial Stout Clone

I have brewed this recipe twice. First was October 2014. Did 10 gals which I fermented in 2 carboys. I used Wyeast 1056 and the result was a nice, clean beer that was just a tad boozy on the nose. Both carboys went into a 8 gal bourbon barrel. I sampled once a week after week 2. At week 5 it...

    Oak for Red Wine

Order the honeycomb staves from Black Swan Cooperage. Cheap and lots of surface area!

    Black Swan Honeycomb Barrel Alternative

I bought an 8 gallon Black Swan barrel from a whiskey maker. The barrel had bourbon in it. I aged my RIS in it for 5 weeks. I sampled at 2 weeks, 4 weeks, and at 5 I thought it was ready. From there I bottled it and it is fantastic. I bottled in champagne bottles and gave them away during the...

What is the magic number of sacks to complete the order. I haven't put mine in yet, but will be adding a few.

    Pinlock Question

I have a bunch of pin locks and sometimes I find the gas side leaks upon cleaning/re-assembly. More often than not, I think the poppets and the poppet o-ring are not sealing inside the post very well. If I crank the gas to around 30psi, and depress the poppet quickly with a few bursts, using...

    Things the SWMBO says.......

My wife upon entering the basement and seeing what is in the attached photo: "I feel like I wanna puke when I think about how much money you have spent here." I wanna puke when I think about the number of shoes she owns and the Coach diaper bag she carries around. I guess we are even!

    Maple Syrup sanitary?

Call these guys. Explain that you need it shipped to Japan. I bet they would take care of you. My guess is you wouldn't need very much either......maybe 100 ML which sells for $3.50. The sugarmaker is a very good friend of mine. Let me know if you do not have any luck. He makes the syrup...

New England Grain Buy Sept 2014

EBS: I'd be interested in a 1/4 of Star San, but I believe you posted SaniClean, not Star San. If you wanted a 1/4 of Star San I would pick up a 1/4....maybe 1/2. Also, I think the pricing on the sheet of SaniClean (4 x 1 Gal) is incorrect. Should be $111 plus shipping?

New England Grain Buy Sept 2014

I just plugged in the other half bag of BZ-VIEN.....and a couple full bags for now....will probably add some more after I look at my inventory and future recipes. Also, when the time comes, I'd be happy to come down on pick up day and help organize/weigh/split/carry/load.....etc. Count me in...

    WLP644 -Brett B Trois

I recently brewed a 100% Brett IPA using Brett Brux Trois from White Labs. I followed the Southern Lands recipe from Modern Times Brew in San Diego. They post the homebrew recipes right on their website, in a Beersmith file nonetheless! I did not have access to Calypso, so I used Mosaic...
