    Dunkleweizen fermentation duration before bottling

Hi all First time brewing a dunkleweizen for me. I'm wondering how long I should wait after fermentation is complete before I bottle. It seems that many people recommend doing it as soon as fermentation is complete, as dunkleweizen is best drank as fresh as possible. What are your thoughts...

Someone with RIMS expertise please help - last attempt before a change :(

Ok, so I've posted about my problems a couple of times but I wanted to sum up my issues in a LAST DITCH ATTEMPT before I try HERMS. I have the following system: 10 gallon cooler w/ rims tube mounted to the side of the cooler vertically. SESTOS PID with pt100 sensor mounted on the output of...

    RIMS problem whilst ramping temperature?

Hey guys I just set up a rims system, and have managed to auto tune my PID, leak test and do a 'wet run' with water. The PID maintains the temperatures very well. However, when I ramp the temp (say from 50 to 60 Celsius) the in and out tubes shake and it sounds like a tea kettle when it has...

Help needed on my BrewPi Spark RIMS build

Hello everyone I am attempting to move to a RIMS system, and, although it is still in development, I am going to use the BrewPi spark to control it. Now, I want this system to be BASIC. I don't want large control panels, etc, and this is why I wanted to use the BrewPi. All I want is the Spark...

    RIMS element contact on tube

Hi everyone I'm busy getting my rims setup completed, but the blasted element is making slight contact with the rims tube on the very top edge of the element. Is this a big issue? I don't want to bend the element too much and break the damn thing. Thanks!

    Problems with strike temps

I use a 10 gallon igloo cooler for a mash tun. When beersmith 2 provides me with a strike water temp, should that be the temperature of the water that is INSIDE the mash tun prior to the addition of grains, or does beersmith's strike water temp take into account heat loss during transfer...

First time washing yeast - did i over do it?

Hello everyone On the weekend I washed some yeast for the first time. It came from the cake off 5gallon of Kolsch, which had been in lager stage for two weeks (5celcius). I poured boiled and cooled water into the carboy, and swilled it around. I dumped this into a 2 litre sanitised baking jar...

Can you help with my boil off?

So I brewed a beer today. I hit my pre boil gravity of 1.033. After boil I was 1.040 - but I was supposed to be up at -1.048 . I currently have it set for 10 litre boil off for a 90 min boil, because that is what some website told me for a 70liter kettle with my dimensions (probably my...

    Water for a kolsch recipe

Hello everyone! I plan on brewing my first kolsch on Sunday. I want to make sure that my water is as close to possible given my time constraint. I do not know my water chemistry and I do not have any minerals to add. I can pick up basics from the home brew shop tomorrow, but I realise that...

It's time - help me set up my dedicated brew lair!

So, I'm finally moving out of my 15' x 15' studio apartment into a big, shiny 3 bed house! I currently brew 5 gallon batches using BIAB, and one of the motivations for getting a house was to upgrade my setup (hey, everyone has priorities!!). The requirements for the house were at minimum a nice...

    American Red Ale + Brett?

Hello everyone, I recently had a flanders red that I REALLY enjoyed. It wasn't overly sour, but had a bit of tart to it that was reminiscent of cherry pie. What I want to do is get the cherry sourness added to an american red ale that I am about to brew. I have never brewed with brett...

The effects of reducing grain bill

Hello all, What is the effect of reducing the grain bill? Clearly, the gravity and colour will reduce. But what about flavour? does it become less pronounced? A recent situation: I brewed a beer that was supposed to come out with a pre-boil gravity of around 1.07 or so. I used about 13...

    An interesting brew indeed

So, yesterday I attempted my first iipa. I used about 13 pounds hacyon, and a quarter pound of Munich and crystal each. I have never mashed with that much grain, nor attempted an iipa. When mashing in it was quite difficult with that much grain in my bag, but I did get it all saturated and mixed...
