    I make a Vienna/Cascade SMaSH that never lasts long. Even my wife likes it and she doesn't like hoppy beers! Vienna malt is one of my favorites right along with Maris.

    "Clean" and "sanitary" are not the same thing. Start simple and go from there; +1 on the SMaSH Ale post. Also, get to know your beer all along the process by smelling & tasting. Check the propane bottle BEFORE brewday.

    2015 US Hops crop

    Being a former Oregonian, it's probably a combination of this last summer, which was murder on any sort of crop grown in the PNW, and the increased demand from craft brewers & home brewers, which will likely cause some pain for all of us. Hopefully there's a bumper crop next year.

    how are these temp swings affecting my beer?

    IIRC, WLP001 tops out at 73F. I'm no expert, but I wouldn't be surprised if there were a few fusels produced. How long was it at 77? You might get lucky with this one if it wasn't there very long. Edit: Gameface beat me to it with a much better explanation. Didn't refresh the page first.
