    I used about 2 times the ginger through out (I live in Hawaii and have plenty and like ginger alot!). Came out great, but I was hoping to get a late bit of Hot so will add a few ghost pepper seeds in part of my next batch. It was excellent and everyone including me loved it.

    Jalepeno vs Habanero in chili

    never entered na comp, but friends have. Very important to read and understand all the nuances and rules meanings etc. Says have to declare style of underlying... I'd say 10A American pale ale...also says vegetable must have aroma etc... mine didn't really don't know how to interpret that bit...

    Fermenting in corny

    I use only pin lock cornies that pick up is at the very side. Bottom has a channel/groove in it, When I put in fermenter (cooling refridge, I'm in Hawaii) I just put a couple small spacers under the beer out side post raising that side about 1-1.5 inches. The trub etc settles to bottom side...

    This isn't anything like a ginger soda is a pale ale/blonde with ginger taste, but the spicy/hotness didn't seem to come thru. If she likes food with ginger and a light beer she will like it, I would think.

    Amarillo APA

    Almost exactly my recipe, I used no munich and 24oz Caramunich Malt same IBUs too. Was a very nice drinkable beer (like a nice Chardonnay wine on a late afternoon). Made Amarillo my favorite hop as seems to leave less after taste (IMHO). I named mine Amarillo Blond. Think you may like this...
