    Thanks everyone. Looks like the beer turned out fine. I was just a little surprised as it was my first time adding frozen fruit. Bottled it right away. Looking forward to drinking it.

    No, it does not smell bad. Smells like strawberries. Tastes like strawberries. I suspected it was yeast as that's what it looks like, but I also wasn't sure if yeast buildup on top of floating fruit was normal. Thanks for the input. I'll probably proceed with plastics just to be safe.

    121c is sterilization temperature. I'm not looking to perform surgery. Dishwashers are definitely able to reach sanitization temps, that's not what I'm asking. What I want to know is if a bottling wand can handle those temps (we're talking 150-180F, not C)

    Yeah, I shouldn't have left them in. I thought it would be okay since I boiled them, but they've been floating there exposed the whole time, which, along with me opening the bucket, made plenty of opportunities for something to grow. I'll keep that in mind for next time.

    Post your infection

    Okay, I think I got one. Witbier, 3 weeks in fermenter (don't mind the muslin bag). Checked on it to find a white film on the surface. Can't really tell. My big issue is that this is a plastic bucket, so if it is an infection, how should I best clean/sanitize it to kill of all the bacteria?
