    Disappointing Efficiency

Ok this is a first for me. Water chemistry is fine, I think. Never had a problem. While brewing some of my seasonal pumpkin ale, I look into the refractometer, and guess what--1.045 OG! I was aiming for 1.055. Again, I don't think its my water unless the alkilinity has gone up severely...

    Green tastings

Just finished this past Sunday brewing dogfish head 90 minute clone. Ended up with 6 gallons, instead of 5 1/2. I must have over estimated the amount Of water I would need slightly. Today I thought I would take a gravity reading, even though it's early, and given a little bit of a taste since...

    New to Yeast Starters

Ive got the mr malty app, but I'm still having trouble figuring it out. I'm brewing a high gravity beer, so need a healthy pitch. Let me be specific, I am getting in the calc that I need 314 billion yeast cells. With a starter, it appears to get that number I would need 2 packs in 3.58...

Wyeast whitebread ale 1099 smack pack starter question

Ok so I am getting ready to brew a high gravity beer. Target is around 1.088 OG. I've got a new smack pack of Wyeast, and understand I need to do a starter. Never have done one. Using Mr. Malty app, it tells me I need two packs in 3.79 quarts for a simple starter. So, does this mean I buy...

    Clone of dogfish head ale

I'm going to be doing my first attempt at A dogfish head clone brew. It has an initial mash temperature of 122°, mashing. Then, raise the temperature to 149 for mash duration. Here's the problem I'm running into: I've never brewed with a variable mashing temp. I mean, I've always got my strike...
