I know of several by Dod Fish Head (like 120 and World Wide Stout)... several by The Bruery (like Black Tuesday and Gray Monday)... several by Avery (like The Beast Grand Cru and Mephistopheles)......... just looking for folks' opinions on those and others - and hoping I discover some I haven't...

I'm currently squatting in North Carolina... where beer over 15% ABV is illegal to sell. That said... I travel...... a lot... so I can get access to most beers available in the country. So...... help me with a list of goodies to bring back for my NC buddies and I to enjoy. :tank: Best Beer...

Warming should help, yes... but don't worry about failure. It's fermenting... so you'll make beer no matter what! :mug: Have patience, man... perhaps even expect 30 days in primary...... but don't give up just because things are progressing a tad slower than you thought they would.

It was a good three finger pinch of ground sea salt from a bowl. In a 1 gallon batch, that was sure to be noticed. You're right...... should've boiled pasta in the wort to see what happens! Alas, I dumped it immediately. Well... immediately after cursing. :)

Thought you home cooks would enjoy this with me... I'm doing a one gallon batch of a new recipe... so I'm in a pot on the stove. Well... um... whenever I'm boiling for pasta (often), I add a dash of salt to the water... Yeah...... added salt to my wort...... it was an automatic movement...

I wouldn't just leave it on and forget about it without temperature control of some sort (even if that's just a thermometer and regularly checking in on it).

Very interesting. I like to age beers... and I also rarely want to consume a couple liters of the same beer at a time. Thus, I'll never personally go this route...... but this is a nice how-to for those that want to give it a shot.

Thanks guys! They actually had a ton of liquor still left in them. Haha! I think I got drunk from the fumes just taking them home... worse problems to have. :mug:
