    Placing lid over jar during fermentation process

    Yes, It is for sure ok. People (including myself) keep scobys in a "scoby hotel" which for me is a sealed tuperware container. I keep it closed for weeks at a time, until I need to add more tea. The scoby's are completely viable and healthy after that period of time.

What will help is adding 1/2 teaspoon of sugar to each bottle (or add fruit) as extra food for the yeast to consume and make c02.     ScobiWan: Glad to hear you found what your looking for. They have 3 different sized ones, but yours will most likely be the small. Also there is a $20 minimum purchase amount for shopping online but if you give them a call you can puchase just the spigot over the phone.
