    Skip the secondary fermenter

I dry hop most my beers. After 2nd'ry and non-secondary runs, I prefer to secondary. Dry hop character is much less pronounced in primary.

    Simcoe/Citra/Amarillo IPA review

You should plug it into beersmith/brewtarget to check. I just ran .5 Mag@90min and 1oz simcoe@5min and got only 30.9 IBU's. That's low... So no, I dont think 1oz @ 90 is too much. Also, take the 1 oz simcoe to 20min & ibu's jump to 47.5 --> more on your way. Yes, you get some bitterness from...

    Simcoe/Citra/Amarillo IPA review

I dont think you'll get enough bitterness. Half ounce of mag & then a ton at 5min and under seems like poor utilization. Even if u kept 1oz simcoe, which is fine, I would toss in at 10/15/20 depending on ibu calcs. You have 8oz late hops to play with...not gonna hurt you. I'd even cut the...

    Simcoe/Citra/Amarillo IPA review

Dont think you can ruin it either way, however, I would: bump Mag. to 1oz Combine flameout + hopstand hops Up 5 min addition to 10min...1.5oz However u want to mix them. Sounds tasty :ban:

    West Coast IPA critique!

I'd swap the Carapils for Crystal 45 & steep. Add 1lb sugar late & gypsum to the water. Kick boil time down to 60min, 1/4 DME beginning, 3/4 DME late. Echo what others said on hops. Hopstand looks good. DH with 3 oz plus

IPA - WCS with Amarillo/Simcoe/Citra hop additions

Just bottled this...it's amazing, tastes like rainbows. :fro: Ended up doing 2 DH charges, 2 oz/3 days each. 1st with Amarillo/Citra & 2nd with Simcoe. Siphoning with paint strainer bag was difficult with all those hops(pellets). Learning here & will be bagging the next DH go around in...

    Post your infection

What is this?!? This was just taken about 4 hours after pitching 1L starter with a questionable yeast that contains Brett. Just starting to ferment. I did use 1/2 a whirlfloc. I havent seen this type of coagulation before so not sure if will disipate during peak fermentation or not? Smells...

How long washed yeast stay alive after racking?

I want to rack my beer to secondary for dry-hop, however, I wont be able to wash the yeast/trub for about 5 day afterwards. If I leave some beer in there & keep the airlock on, will it stay alive or am I risking viability? Thanks

    Anyone try BRY-97 yet

Brewed a 1.070 IPA on Saturday, with the resultant 24 hour lag phase. Last Sunday kicked off an agressive fermentation (no blow off) which seems to be primarily finished now Tuesday morning  I know its conditioning, but krausen has already dropped. Not even S-04 finished this fast! I...

    Saison Cottage House Saison

Mine's about 3-4 weeks in the bottle. Really shining thru. Hindsight I'd probably omit the lemon peel & up the pepper, otherwise pretty solid

IPA - WCS with Amarillo/Simcoe/Citra hop additions

Nice!! Sounds good. On the 2 stage DH, I kinda want some simcoe nose to pull thru. Should I go DH1- 2.5 amarillo and DH2- 1.0 Sim & 1.5 Citra?...or just mix all 3 & divide into 2 additions? Grist has some MO, and of course some sugar & gypsum in there :)

IPA - WCS with Amarillo/Simcoe/Citra hop additions

This is pretty darn close to what I was planning, with maybe not so much @ 0. I havent done a 90 boil yet, but might venture out this time, maybe 75 min or so. Good suggestion, thanks. I'm torn whether to burn 5oz in DH or utilize in the boil. Leaning towards the former, with the above ratio...
