    I use this same method, with one change. I sparge first, running off into Cornies, then toss the grain in. This allows me to completely seal with Co2, and using one of those QD to Faucet adapters, I can easily check the sourness over the following couple of days.

    all simco ipa

    My "Sh@&! I'm running out of beer, better get something in the keg quick" beer is a Simcoe Pale Ale. 6 lbs Light DME, 2 oz Simcoe (1 @ 60, 1 @ 10.) I can throw it together mid week in a couple of hours, and have a keg ready to drink in a couple of weeks. I pretty much keep this one in stock.

    I screwed up, can I unscrew it?

    Five days isn't enough to fully carb. You don't want to re bottle, unless you like the taste of wet cardboard. You might be losing carbonation, but I've had it turn out ok. You're probably fine. Give them more time at room temp.. should be ok.

    Simcoe and Cascade IPA

    I'm sipping one now. Ounce of simcoe at start, ounce of cascade at fifteen, tastes great. Next time I think I'll reverse that and add another ounce of simcoe at flame out. Been pleased with the pairing though.

    Massive amounts of C02 coming out of the keg.

    It's not foamy at all. There are large gulps of co2 coming out. I checked the post. It, so far as i can tell, is uncompromised. Checked the o ring, and it looked ok, i didn't inspect it thoroughly though.. guess I'll check that and report back.
