    What did I make?

Was going for a Scotch Ale, but I'm thinking it might have ended up a little too hoppy. 78 2-Row 10 Munich 2 C80 2 C20 2 Wheat 2 Melanoidin 2 Chocolate 2 Brown Sugar Cascade & Simcoe 40 IBU OG 75, FG 21, 7.2% BUGU 0.53 17 SRM Tastes kind of like a pale ale. Full bodied with...

Vertical Epic 12/12/12 clone, anyone make it yet?

I had the epic on tap at a local pub, and first thing I thought was cinnamon. No wonder. You should give it a shot!

Is there a fix for a sweet stout that is TOO sweet, or do I dump it?

Yeah. If you use granules, use half that amount. And add only the bourbon. You can add it straight to the keg, but give it some time, 3 to 4 weeks. To recap add about 5oz oak chips (2.5 oz if granular oak) to 16 oz bourbon. Wait 4-5 days and pour the bourbon through a coffee filter. Pour 8 oz...

Is there a fix for a sweet stout that is TOO sweet, or do I dump it?

I just said 16 oz cause the oak will soak up some of it. I would give it a month after adding.

This, but add oak infused bourbon. 5 oz oak in 16 oz bourbon for 5 days. 8 oz bourbon per 5 gal. Next time you make this, bump IBU to 40.

    What Color is this?

I got a 13 Srm at hopville, wondering if your black malt was ultra black.

    What Color is this?

To me, it looks brown, maybe 20-25 Srm. I think it would be black if it were in the 30s.

    Recipe Opinions

Hi Denny, I brewed your recipe for Noti with some tweaks. Replaced Galena with Chinook for simplicity, and reduced IBU to 35 for my tastes, but still followed the schedule. Also mashed at 153 instead of 152. Hit 66 points. Will let you know how it turns out (if I remember!).

    Recipe help!

Nice job, you'll probably finish high, at maybe 24 points, cause of all the oats and roasted malt. Don't be alarmed. With that OG, your abv will probably hit just below 7 which is perfect. What yeast did you use? Estimated ibu?

FG a little high - is it mash temp?

That sounds perfectly normal. My last stout had 5% oatmeal and finished at 21. You're using a lot more oats than that.

    Recipe help!

I use 1.3qt per lb grain. Which means you would mash with 5 gal.. But the amount of grain you're using is too much for 5 gallons. Edit - just plugged into hopville, you'll prob hit right at 8% which isn't too bad, you'll be fine as long as the booze doesn't punch through. Just call it imperial.

What would you brew if you were me?

IPA all day. 93% Two row, 7% crystal, dry hop and serve it up hazy. :)
