    Mocha Oatmeal stout...like wine?

Well I forgot to take an OG reading and then figured FG was irrelevant. I bottled after 3 weeks.

    Mocha Oatmeal stout...like wine?

Well I just tried another beer from this batch it is about 2 weeks after bottling. The wine like taste has subsided dramatically. However there is a strange aftertaste. It is mainly in the burp after I take a drink. It is hard to describe. However its really only noticeable in the burp. Not in...

    9% ESB? Thoughts please

Ok maybe ill ferment longer than 3 weeks Topher. I was planning on keeping it in primary though. I dont have a secondary fermenting vessel yet. Off topic, I brewed a roughly 7% stout that has that alcohol burn, with a wine taste do you think that would mellow with age as you mentioned? Its been...

    9% ESB? Thoughts please

I think I will go 3 weeks primary and then bottle. This brew had a monster ferment. It blew the stopper out and thankfully I was watching right before I went to bed when it blew. I cant imagine my dismay if it blew out and bubbled over all night. I cant wait to try this one...my last brew a...

    9% ESB? Thoughts please

Hey all, I went to my LHBS, and wanted to pick up a High ABV version of my fiance's favorite beer. She likes ESB's. I called them and asked them to put together something for me. Now normally Dan is there recommending things for me since I am a new brewer. This time he was out and his...

    Mocha Oatmeal stout...like wine?

Gotcha so I gotta focus on temp control next. I am under the impression that the stick on fermometers are actually telling the temp of the beer and not room temp. Is that correct?

    Mocha Oatmeal stout...like wine?

So I am bottling up my second batch. Everything seemed to go ok. When transferring to bottling bucket it seemed very clear. I took a sample and it has almost a wine type smell. It has a bit of a harsh alcohol bite to it. Can anyone explain what might have happened or if this alcohol twang will...
