High ABV beer with high FG not carbing in keg

Hi all, I have an imperial stout that finished out around 1.025 with an ABV of 9.75%. Finished higher than I wanted, but so be it. I normally force carb in the keg, cold crashing to around 36-38 degrees, then letting the beer sit at around 30 PSI for a day, then a week at serving pressure...

30# grain bill in 15g pot?

So I have done a few 10 gallon BIABs in my 15 gallon pot before, and they've gone fairly well, but they have always been fairly low OG brews. I am thinking about a 10 gallon batch of my IPA, which means about 30# of grain. About 10# more than I have BIABed before :drunk: I'm trying to...

Beer gas refills near Albany, NY?

Feeling the urge to get a beer gas system for my stouts, but the places I would normally go to for refills of C02 don't refill beer gas tanks. Anybody know of a place within an hour's drive? I live near Albany, NY. Thanks!

Styrian Goldings hops from LHBS have really low AA

So I am getting ready to brew up Revvy's Leffe Blonde clone, and I bought some Styrian Goldings hops at the local shop. They're labeled as 1.4 AA, when most other listings I've seen for this variety are in the 4.x - 5.x range. I asked the guy at the shop to confirm that the label wasn't a...

    my water is suddenly brown

Dang it! Brew day scheduled this weekend and as I filled the sink to shave this morning, the water was brown. Town says it may take a few days to clear. I'm thinking of grabbing some Primo or RO water from the store so I don't have to cancel. I have lactic acid on hand to adjust pH down, and...

Another thread about a shipped, bloated Wyeast package

Hi all, I wanted to brew an IPA with pac man yeast, so I started looking into avenues by which I could acquire some. My options seemed to be order from Morebeer.com or try to culture my own from a couple bottles of certain of Rogue's beers. Feeling a little less adventurous than some of...

    pH adjustments at mash

So I did search, but it seems like there are two camps when it comes to water: 1) don't care and 2) chemistry major. I do care, but.... I am resisting the slippery slope of playing with water chemistry and trying to keep things simple. Generally, I get good efficiency but on occasion, my...

Moving from 5 gallon to 10 gallon BIAB batches

Can anyone share their experiences as far as any efficiency drops or other challenges in going from 5 to 10 gallon batches? I have a 15 gallon brew kettle, so whereas I would go almost full volume BIAB for a 5 gallon batch, just holding back a little for a rinse of the bag, I'm not sure I'd be...

Do lager starters start slower than ales?

There are a few posts about this that come down on both sides of the fence, so I'm just asking for some advice about my specific situation. I've made several starters for ales that took off quickly and were more or less done in 24-36 hours, even with fairly old yeast. I could tell because...

    Step up starter blow out

Hi all. I am resurrecting a 6 month old pack of Wyeast 1469. Yeastcalc said I'd get the target cell count in two 1L steps. I use a 2L E flask and stir plate. 1st step was pretty normal as far as krausen. After activity subsided, refrigerated over night. Decanted the "beer" and put another L of...

    Introducing a swamp cooler mid-fermentation...

Hi all. I'm brewing a cream ale that should be pretty neutral. I'm using Wyeast 1056, which should be OK up to 72 degrees according to their site. It's 67 degrees ambient in my basement. The stick on thermometer on my better bottle says 70 degrees. May be warmer inside. Because I am...

    Well that was fast...

So I will say off the bat that I'm missing a crucial bit of information - a gravity reading. When I get home tonight I will check and update this thread. On Sunday, I brewed a stout. OG was 1.053. For the first time, I used White Labs yeast. It was the Irish Ale yeast. Also made a starter...

    Silly stir bar question

So I am using my new stir plate for the first time, and I am wondering what is going to happen to that little 1" stir bar when I attempt to pitch the yeast out of the flask. I think the starter will probably have completed by the time I am ready to brew, so I will cold crash it and pour off...

HBT 2013 Giveaway - Thank you HBT and Morebeer.com!!

My loot from the HBT 2013 Giveaway arrived today. Gotta decide what I am brewin' up in this rig! Morebeer.com was super helpful and accommodating. They really wanted to make sure I was happy with my prizes. I'm a BIAB brewer, so they subbed out the sparge arm for the Blichmann burner. Now...

Working up to a full nitro setup...

Hi all! Came back to brewing at the end of last year, and I am starting to want to brew me up a nice stout... From what I gather, one of the prevailing theories is that the tiny bubbles associated with this style have more to do with the stout faucet and restrictor plate than they do with...

Passive cooling for PVC draft tower

Hey guys - built this with some of the great ideas from the forums. Now I've got two Perlicks, no cooling fans to mess with, and the taps are cool to the touch while the PVC is not. Having the extra copper hanging off the T's in the fridge seems to help. Thanks for the ideas!

First AG (BIAB) - way over gravity and lots of trub!

Hey, so I decided to give BIAB a try today. :rockin: I used a Scottish 80 /- kit from Midwest. The grain bill was as follows: 11 lbs. American 2 row .25 lbs. Biscuit .5 lbs. Caramel 40L .5 lbs Chocolate .125 lbs. Special .05 lbs Peated For the kit, they list this as between 1.048...

Anyone know if the regulator that comes with the KRS 2100 has a check valve?

Hi all Just getting into kegging, and I am going to be getting my hands on a KRS 2100 to cool and dispense. I've read about a few mods related to getting the temp lower, installing the ball lock fittings, etc, but I have not seen this one detail - does the regulator that ships with this unit...
