    secondary fermentation with a large carboy

    I've only ever used a 6 gallon as a secondary, and never had any issues in the finished product. When I do use a secondary I notice that it seems to "wake up" the yeast and the air lock starts bubbling again, so it's producing enough CO2 to fill the headspace easily. Also knocks a few points...

    Honeysuckle Wheat Ale?!?

    Rock hard DME

    Curious Grizy; how did this turn out? Any off flavors in your brew?? I have some DME bricks at home that I'd like to use up. I thought about maybe softening them up in the microwave first, as I've used that trick several times with hardened brown sugar and it works great. :mug:

    The yeast trub at the bottom of the primary is dormant, but there is still plenty of yeast in suspension, working at cleaning up things as you said. It is not necessary to leave the beer in the primary to get this benefit, as all the active, suspended yeast will be transferred to the secondary...

    Sierra Nevada Pale Ale worship

    I'm with you IAM - SNPA is my all time favorite American beer, good in any season with any kind of food that I would drink beer with. It's da bomb! In fact about the only time I don't like it is tailgating at the Redskins games because you really can't drink it out of the bottle!
