    If you maintain a consistent grain to water ratio with a larger grain bill, you have to lower the sparge volume, right? I thought sparge was a pretty big player in efficiency.

    Mash low - we shot for 151F Ferment hot - like 85-90F with 3724 yeast Our version isn't nearly as funky as the real thing, but it is dry and refreshing. The BJCP description for saison says effervescent, if I recall, so carb up!

    I mashed at 152F for a little more than an hour (things got busy) and I split the hops up as suggested. I did 1.5 oz FWH, 1 oz @ 10 min, .75 oz @ 5 min, .75 oz @ 1 minute.     It may end up being pretty dry, but you could add a non fermentable sugar before you bottle it.

    Just got the new "Cereal Killer" Grain Mill

    I like mine. Factory setting seemed too big, so I ratcheted it down. The factory didn't have the adjustment knobs on the same, so the indicators point to two different sizes is my only complaint, but I wouldn't trust the markings much either way. Get some gauges.

    Naturally Clarifying A Pale Ale

    I had a cream ale in secondary. I thought it was pretty clear, then the top couple inches looked darker. Then half looked darker. Then all. Just like in your pictures! It freaked me out initially, so thanks for sharing.

    Also, I didn't use a secondary. I let them sit 3 weeks to carbonate, then started drinking. It really is tasty stuff.

    That is a little drier than mine, especially if it is 1.003. I don't have the final gravity with me right now, though. I have pasteurized other sweet ciders before, so it can be done, but it is considerably more work.
