Yes, you nailed it. It vacuums out the air, sealing the canning lid down. You just remove the plastic attachment and screw on the outside ring. I also throw them in the freezer to help preserve the goodness. Hope this helps

The gravity of your pre-boiled wort should be considerably lower. The hotter the liquid, the less dense it will be because it will have expanded (think of it being on its way to becoming steam). Also after mashing, you have just extracted all of those wonderful sugars that you will eventually...

Another thing you can do to make your yeast happy is take a 1-2 gallons of your cooled and fridge/freeze it and stagger those additions to your other 3-4 gallons of fermenting wort. Just make sure you keep the 1-2 gallons cold enough so that it doesnt unintentionally grow anything. When you do...
