    I think I'm late in chiming in on this one, but here's my two cents... I have left a high gravity warmer in secondary for close to five months. I then (at a recommendation from my local HBS) added some nottingham to the bottling buckets, to be sure there was something to eat the priming sugar...

    Hi All, I typically brew my Christmas Warmer in June/July, but, regretably:(, I haven't brewed anything this year. Is it still possible to brew a legit Warmer... something with a little kick that still go does smoothly? Or should I start planning for next year?

    Hi All, How long can a high gravity ale remain in the secondary before I should be concerned that there won't be enough yeast in suspension to carbonate in a bottle?

    Is that exacly why you would use a temp controller? You set it at a certain temp and leave it...? Then , nothing would freeze. Maybe I'm missing something?

    Thanks... I saw that but didn't think to remove it. Did you take any steps to fill that hole back in after you run your stuff through it? Should I worry about cold air leaking out? Once my conversion is complete, I'm going to have to make a label saying something like "Courtesy of Buford."...

    I finished my conversion last weekend, and I tried adding the Ranco tonight. From what I've read, the temp probe is fed through the drain hole in the back. I've removed the drain tray, but I can't see how the temp probe fits... It almost looks like it has to be bent to get past the...

    Thanks for the advice. I'll probably keg this batch and use the Petrol Gel on the rest. I just ordered some from Northern Brewer along with new Orings.

    Fermentation Foam

    I've seen tons of pics on this site that show a lot of "foam" at the top of a carboy. I've only done a few batches using a carboy (vs. a bucket), and I don't remember seeing that. I always have the junk at the bottom but not the top. Should I be concerned? :confused: :confused:

    I know this has been said several times, and I'm only a newbie, but I've used One Step for all of my batches (only 8 so far), and I definatley leave everything wet. I haven't had a problem with off flavors yet.

    Winter Warmer Aging?

    Hi All, I just reracked into secondary last night, after being in primary for 7 days. My question is... How long can I leave my beer in the secondary before bottling? I don't intend to even try this batch until my new baby is born in mid-December, so it'll be conditioning in the bottle...
