    High FG and PH

I just brewed an IPA, 15 gal batch, that has been in the fermenter for 2 weeks. The FG has been at 1.020 for 5 days straight. Expected FG was 1.011. I just took a PH reading today and it’s at 5.1, high for a finished beer. Looking back over my brew day notes I realized that I forgot to add the...

Formula for strike water temp using HERMS

For those of you using a HERMS system, how do you calculate your strike water temp? I just did my first brew on my 30g Spike system. I used the standard formula that I've always used; (.2/R)(T2-T1)+T2 Where R=water/grain ratio T1=grain temp and T2= target mash temp For this brew I used a 1.40...

    HERMS Sparging tips

Ok, I did my first brew last night on my Spike HERMS system and it was my first time fly sparging. Overall brew day was a success but, I feel like I could improve on the fly sparging. My process; Mashed at 154 with constant recirculation. 1 hour. At the end of the mash I raised temp to 168 to...

Treating sparge water for HERMS system

I'm about to brew my first beer using my new 1/2 BBL Spike HERMS system and wanted to get some intput on my planned mineral and acid additions. I've always batch sparged before and this will be my first time fly sparging. Using the HERMS system will require more water in the HLT than I will...

    Yeast starter help

I’m going to be brewing my first 15 gallon batch soon and need some help on making my yeast starter. I’ll be using WY1318 and have 3 packs. According to Mr. Malty, I would need to make around an 11L starter. I’m wondering if I can just pitch the 3 packs into 11L of 1.040 wort or should I...

    Unitank capacity

If I get a 1/2 BBL Unitank does that mean the total capacity is 1/2 BBL or will I be able to ferment an entire 15.5 gallons and still have head space? Thanks,

Number of fermenters on DIY glycol chiller

I’ve been thinking about building one of the DIY Glycol chillers. If I build it using a 5,000 BTU A/C how many 14 gal SS Brewtech Unitanks could I expect to to ferment off of it? How does a 5,000 BTU DIY unit compare to a 1/5, 3/8, or 3/4 HP SS Brewtech chiller? Thanks for any input!

    Difficulty breathing after milling grains

Over the last few months I've had difficulty breathing and a dry cough for a few days at a time off and on. After thinking about it, it seems to happen in the days following me milling grain. Has anyone else experienced this. Could be just a coincidence but I'm pretty sure this is what I've...

    Fermentasaurus cold crashing

I’ll be cold crashing for the first time soon in a fermentasaurus. Since it’s plastic I assume the negative pressure will cave the sides in. I have the pressure kit on it. Will hooking up CO2 and keeping it under pressure alleviate this? If so, how much pressure needs to be applied? Thanks!

    Help correcting too bitter beer

Looking for suggestions/ideas Due to a terrible miscalculation on brew day, I have a beer in the fermenter that is way too bitter. Long story short, I added more late boil addition hops and forgot to remove the 60 min hop addition from my recipe. That plus undershooting my OG has left the beer...

Adding peppers and dry hopping, what order?

I plan to add some habanero pepper to my latest IPA that I brewed. The beer has finished fermentation and I'm ready to make the additions. The IPA recipe that I brewed calls for dry hopping. Should I dry hop first and add peppers later? Add peppers first and then dry hop later? or, add them at...

    Quick disconnects

I just purchased a plate chiller and plan to get a pump soon. I want to set it all up with quick disconnects but, before I spend more money than necessary I thought I would check. I have a bunch of quick disconnects already that are for use with air compressor hoses. Would these work? Thanks

    Water spreadsheet differences??

So, I'm pretty new to the water chemistry part of homebrewing and I've tried to read as much as possible and learn as much as I can. You all have helped me out tremendously with that as well. I started experimenting with the Bru'n water spreadsheet and also tried out Brewer's Friend, EZ Water...

Irish Red or, not so red

I brewed an Irish red recipe (beer smith screen shot below). Today I took a gravity reading and was disappointed to see that the color was more of a pale ale to amber color rather than a deep red that I was expecting. Any suggestions on why? Not enough color in the grain bill? Thanks for any...
