    Dry pale ale

    We have a local brewery here Evolution and I love their pale ale it has a dry kind of finish to it I've never had in other pale ales. I want to replicate it but not sure how they do it. Is it a certain yeast?

    Cherry hefe white mold pieces?

    I've had a Cherry going I put 5lbs in first 3 weeks and I went do a secondary and it had theses little white mold looking patches. I racked it anyway trying to avoid them. I bottled it today and it had more patches in it. I'm hoping its just mold from the cherries floating. Here it is:

    Modelo Especial Clone?

    I really like Modelo Especial but all I can find is Negra clones. I know its similar to any other light lager but does anybody have any suggestions? I like Tecate also but its not quite the same.

    Too long in fermetation bucket?

    I've had the Ethiopian mead in a fermentation bucket for a little less than 3 weeks and I plan on cold crashing it for another two weeks in the same bucket.
