    Aeration

Today I was reading the off flavor flash cards from bjcp.com. I noticed that a listed cause of oxidation/cardboard flavors is hot wort aeration. Is this true? I have been brewing extract recipes for over a year now and always pour my wort into some ice mixed with water and then shake like...

Exta Pale LME / Extra Light LME

Are these malt extracts the same? My LHBS only has the light version, and the recipe (a porter) I'm using calls for extra light. Should I just substitute?

    Bottling Emergency!!!

So I've added the priming sugar, filled and capped a few bottles, and BAM!: the capper breaks! I knew it seemed cheap! I'm trying to get in touch with a friend who has one, but he may not be home. What should I do if he's not around?

    Newb question about boil size...

My next brew will be BierMuncher's Centennial Blonde. I'm going to be making the extract version of it and I'm just wondering how much water I should boil with. Can I use any amount of water I want to start off? Typically I think I use 1.5 to 2 gallons of water with the malt extract.

Recipe with Irish or British Ale Yeast

I'm looking trying to find a good extract recipe for my next brew. I have some Irish Ale yeast that I washed a few weeks ago as well as some British Ale yeast in the fermenter now. I'd like to use either of these since I have them on hand. I've just made a stout and brown ale, so I'd...

    Rousing Yeast / 1.020 Curse

I have a batch of brown ale sitting in the primary right now, it's been there since last Sunday. It fermented nicely for about 5 days and then started slowing down. This past Sunday I tested the gravity (it was done bubbling) and it was at about 1.020. I'm going to check it again tomorrow and...

    Cheap Brown Ale

I would like to brew a brown ale while waiting for my stout to condition for another few weeks. I figure this is the best way to keep my mind off of wanting to sample it ;) I've been looking in Papazian's book and saw the Elbro Nerkte Brown and Naked Sunday Brown. While I think the Elbro...

    75 Degrees too high?

So the fermentation of my stout appears to be going well. It's been about a week and it looks like its about done. It bubbles one every two minutes, maybe. It's been fermenting at a temperature of about 73-75 degrees with White Labs Irish Ale yeast. Their website states that optimal...

Warm Liquid Yeast / Making a Starter

Hi All! I just joined the forums and was hoping someone could make sure I'm on the right track. I just received an order of ingredients to brew my next batch. It's going to be a stout so I ordered an Irish ale liquid yeast. It arrived this afternoon, and to my dismay the yeast arrived warm...
