Just started my first batch of cider

5 gallons Mott's apple juice 1 quart of some random organice apple juice made from green apples 2 pounds "Sugar in the Raw" turbinado sugar For the yeast... I went with the White Labs 500... Trappist Ale yeast. I'm fermenting somewhat warm (78 degrees on average) and am really interested...

New fermentation activity while in secondary..

I'm brewing an all-grain nut brown. I let it ferment in primary for about a week... then transferred it to secondary. After letting it sit in secondary for a week, I added some oak cubes that I had been soaking in bourbon for a few weeks. After about a week of sitting in secondary with...

Some damage to my Willamette leaves...

I don't know if these two things are related... my inclination is that they are. I have some leaves that have partially died off: http://www.flickr.com/photos/brewmeone/2595627954/in/set-72157604218426791/ I've also noticed some small holes in some of the other leaves. Upon looking closer...

OK... how long SHOULD bottling take?

The reason I'm asking this... is it always seems to take me 3 hours (or more)... between cleaning bottles, sanitizing bottles, siphoning, filling, then cleaning up. I'm borderline OCD with the sanitizing and cleaning using extremely hot water and star san. I want more than anything to...

    Sam Adams Longshot Competition...

Has anyone here entered this contest this year? I've actually never entered a homebrew competition... but decided to give it a shot this year and entered LongShot. I submitted a Nut Brown Ale aged with oak cubes. I don't see myself winning... but wanted to see what the judges would say.

    Gemütlichkeit

Hello from Atlanta. I first started brewing in 1996... somehow I figured out it was easier to brew beer at age 18 than buy it. I brewed for a few years while in college... doing mostly extract brewing... mostly pretty simple stuff. I wound up taking a break from homebrewing after I...
