    winter watering

    I'v searched around but haven't found an answer for what the winter watering needs will be of my hops. If it matters I live in northern California, we do get full on winter, snow some years, I know that the rhizomes go dormant so does this mean they wont need any water? if that's the case then...

    krausen (nasty looking layer on top) won't drop

    Im not sure on the spelling but the "Kroesen" or layer of stuff on top of the fermenting beer wont drop. This has been the case on the last few batches of beer I'v brewed. I just wanted to know if it is something i should stir back in or just ignore it and when I rack to my secondary it will be...
