    Underattenuated Milk Stout

Petered out at 1.030 My OG was actually 1.068. The person I brewed with has more experience and talked me out of adding water to the wort to bring it down to 1.061. Anyway, it's been on the yeast for two weeks and from last week to this week it didn't budge at all. Should I pitch a...

    Beer hasnt carbed at all

I bottle conditioned my stout. I did a clone of northern brewers big honkin stout. I primed with 3.5 oz of table sugar OG 1060 FG 1020 it's been a week and there is little to no carbonation. What gives?

Pale Ale tasted great until it was bottled

This is a confusing one for me. The beer my buddy and I brewed tasted awesome after fermentation. Very light, crisp and hoppy. Think Sierra Nevad/Founder's All Day IPA. Came in around 5%. Do you think the yeast going back to work during bottle conditioning caused them to put off some...

I have two Wyeast Smack Packs, need to make a starter. Use both?

I am doing a clone of NB's Big Honkin' Stout http://www.northernbrewer.com/documentation/beerkits/BigHonkinStout.pdf I have two Wyeast 1332 Northwest Ale Yeast smack packs. Should I make a starter using both, only one or just pitch both?

What did I do wrong with my beers?

Preface: I made two versions of the Dead Ringer IPA (Two Hearted Clone) a week apart. The one I did two weeks ago is in the secondary, and the one I did a week ago is in the primary. Yesterday I stuck my beer thief (which was clean) into the fermenter without sanitizing it. Bonehead move...

Been holding on to Dead Ringer (Two Hearted) ingredients all summer

Never got around to it. Is this kit still good? Does not include yeast. :tank:

How much wort do you make for a starter?

My Homebrew store sold me a 500 ml flask, but a lot of places online are saying 1000-2000 ml's for a starter. I pitched the yeast in 450 ml of wort made with half a cup of light DME. Will I be good to go today? It's been 11 hours, probably won't brew for another 4-6 hours.

    NB's Dead Ringer IPA

http://www.northernbrewer.com/shop/brewing/recipe-kits/dead-ringer-ipa-extract-kit.html Can I assume this is a Bell's Two-Hearted clone? I've done six beers. I finally nailed the FG on my last beer. Feeling confident. I did their Big Honkin' Stout and it came out under-attenuated. I...

Air conditioning cut off while I was away

Pitched the yeast on Sunday the 21st (9 days ago), left town Thursday evening the 24th. Had very violent fermentation the first 3 days or so. I don't know when the AC breaker popped over, but came home yesterday to a 82 degrees house. Took a gravity reading and it did OK. OG: 1.049 FG: 1.014...

FG is not where i wanted

Original gravity was 1.044, final looks like 1.018 when it should be 1.010/1.012. Is this because I had an exploding top to this batch in the first 12 hours. Violent fermentation. Did I lose a lot of yeast when the top of my carboy blew off?

How long until you had a beer you really liked?

We've done several beers now over about 5 months and results are discouraging. 1 - Porter (infected, undrinkable) 2 - IPA (too sweet, too carbonated, somewhat drinkable) 3 - Oatmeal Stout (strange off-flavors, most drinkable thus far) 4 - Stout (underpitched, too sweet, somewhat drinkable)...

Wheat beer and an Amber - Pressure problems

We did a wheat and an amber yesterday. We are keeping the two carboys at my buddy's house. We fastened a ghetto blow-off system for the Wheat and just used a regular airlock/rubber stopper for the amber. The amber exploded, so he took the airlock off and left the rubber stopper in and went to...

Will this beer be OK without a starter?

I have racked to the secondary, but I was just browsing Northern Brewer for my next beer and noticed that under the description it says I should have made a starter. http://www.northernbrewer.com/shop/big-honkin-stout-extract-kit.html When I racked into the secondary, it tasted great. I...

Northern Brewer mailed me WYEAST without ice

I don't remember seeing an option to have it shipped cold. It just came in a padded envelope. It sat in that envelope at room temperature for 2-3 weeks before we used it yesterday. I smacked the pack and it didn't expand, but we called a local store and they said it was fine. It also sat...

    Did I burn my beer?

After we emptied the wort into the carboy, I noticed this burned spot on the bottom of our brew pot. I guess some liquid malt extract got stuck on the bottom for part of the boil. Am I going to experience some nasty off flavors because of this?

    Second batch not so good

First batch was a disaster. Tasted like vinegar. Pretty sure we didn't sanitize properly. For the second batch, we did an American IPA as follows: Cracked one open after a week in the bottle. Not so good. Before my lips hit the glass, it had this sweet/sour/alcoholic aroma to it...
