I just tapped this one (brewed on April 29) and boy does it taste nice. Still a little flat (I'll take it off line for about a week at this point) but nice. Really cloudy though. I know it's a wheat beer, and it is supposed to have haze, but wow is it ever cloudy.
Seriously, that sucks. I can't brew without inspiration of some sort (home brew preferably). Good for you though, major dedication as far as I'm concerned.
I schedule brew days up to a month ahead in her calendar, and take our oldest child outside with me. Everyone wins. The boy plays "trucks", the wife gets a bit of a break, and I get a brew.

I'm going to brew this on Sunday, but I'm probably going to dryhop with amarillo, and possibly try out some Denny's 50 rather than 1056. I did it to spec last time (and it was awesome) but I think it may be experimental time!
So I brewed this a week ago, and everything went well. Hit the mash temps perfectly, and nailed the OG. I just checked it last night and it's sitting at 1.009! Oops. Hungry little yeasties.
It tastes spectacular though, I can't wait until it's done! I'm going to leave it in the carboy for 2...
Ok, so I've got this on tap and it is awesome! I've picked up the specialty grains I need to make this again, but was thinking of using citra for the dry-hop addition. Thoughts? Anyone tried that?
Here's my copper manifold. It works fine (75% efficiency). I didn't solder anything, just press fit and squeeze with pliers. It makes it easier to clean and adjust, and does not come apart. Oh, and the slots on face down in actual production mode, I had just pressed it together in this shot .:)...
