Central Waters barrel aged beers are phenomenal! Its only about an hour away from Wausau. New Glarus has Scream IIPA out now and Cran-bic which are both great beers as well.
I can't comment on that exact recipe but I brewed an old ale 4th of July weekend. I used WLP002 and it was done fermenting and dropped out in 14 days. I moved it off the yeast and added an ounce of american medium char oak. Its still sitting on that and tastes great. I'll probably bottle it next...
I used some second runnings with a little unpasturized apple juice and a small handful of grain in a container then put it in a crock pot on the warm setting for a couple days. Very sour!

This is a nice IIPA from O'so Brewing in Wisconsin. Not too many floaties but it was a whole cone in the bottle.
I can't comment on #1 but I have tried #2 and #3. I originally cultured my own with raw grain in a starter in a very warm attic and it turned out amazing. My second batch of berliner I tried the white labs lacto. I brewed that in late April and its still not very sour (still sitting in a carboy...
