Well, not sure quite what the weather is doing up here in Kalamazoo, but the calendar says that it's almost time for spring. I want to be prepared with a nice brew that will get me through all of the heat that's headed our way, and rye is what I want.

Would it be fair to switch the 17 pounds pale malt for about 10 pounds of light DME, and then steep the grains and carry on with the recipe in order to make this easier for someone who can't do all grain brews yet? Or am I totally off here?
Just wondering, exactly what kind of DME did you use for this? I'm looking at doing this myself, and I'm leaning towards a plain old Breiss Dark DME. Should I reconsider? This will be my first all grain brew, so I'm new to this whole ingredients thing.
