    I have used the following method a number of times: add 3/4 cup Dutch cocoa powder at flameout. My only complaint is that it makes the head kind of bubbly and dissipate quickly, I have supposed due to the addition of the cocoa oils. But it is worth it!

    This is great! How much cider are you expecting to yield? I think I once read that it takes 25 of those 5 gallon buckets full of fruit (apples / pears) to yield 5 gallons of cider.

    Brewed mine up today...OG 1.064 Took the better part of 7 hours, triple sparged, 120 minute boil to get the volume down.
