Many excellent craft brews have yeast in the bottom of the bottle.
You can reduce the amount greatly by cold crashing your next batch. Will still have plenty of yeast to carb the bottles.
Good timing on this post. I just pitched a blonde ale this weekend. Used WLP005 and it is definitely is giving off major banana smell. First time for me using this strain so i am definitely concerned about the final product. I pitched at 68 F but it climbed to 72 and stayed there once the yeast...
Ok, so after much investigation on this forum my plans for my blonde ale this weekend are to:
- heat one cup of water with a tablespoon of unflavored gelatin. Do not boil, let sit and slightly cool.
- transfer primary to bottling bucket
- add jello mixture to bucket and stir slightly
- put lid...
Interesting..still learning myself but would it not be possible to get the yeast going again. Maybe raise the Alcohol level slightly. Especially if it is much sweeter than desired? Or after so long is that not possible?
What about giving it a shake to aerate and maybe add some sugar to see if you can kick start that yeast again? Boil the corn sugar and water first or maybe add honey or even Belgian candi sugar.
Some are already there others are still a few hours away!

Also, once the beer is bottled is it then ok to condition at room temp for two weeks or should the beer now stay cold while conditioning?
I started brewing just a year ago and had the same confusion. So far out of five batches I have only racked one and it turned out to be my worst as far as clarity goes. Not that the secondary caused the issue but it definitely didn't make it worth the trouble. Have a blonde in the primary now...
Can I add and store my tap water profile. I don't see this option under "profile". Or maybe I am confused about the use of the "water" section within the ingredients. It has defaults of only European towns?
