    How long should a lager stay in D-rest? Like ales, wouldn't it benefit from longer on the yeast cake (clean up)? That's my thinking, but not sure if sitting at 60* for too long is detrimental, before lagering.

    Not exactly sure, but I think I'm going to modify it a bit to make it smaller. Right now it will hold 2 carboys plus room to spare. It's kind of a pain to get carboys in and out of the back, and even though I insulated the hell out of it, it seems to run too much.

    Before you get your own mill, try running your grains through their mill twice. My efficiency vastly improved after doing that.
