If I understand the brewing process correctly the second weeks are to allow the yeasties to clean up as some stuff they produce during noshing on the sugars .

I have now done 4 allgrain brews using the manifold in the cooler connected to a steam generator ( ie steam wallpaper stripper ) to do the temperature steps and all have been a success .

I have had a go at this with minor tweaks to incorporate stuff I had to hand
used goldings for bittering and Sazz for aroma
yeast was the Belle Saison and took my OG 1070 down to 1002 its now...
