    Im aware of the aging time and all, but it seems from this thread that, it was a lovely beer even at bottling time, so i was wondering what when wrong.

    Brewed this and bottled a month ago. plan on cellaring it now since it carbed up nicely. I did one of the earliest variations with d 90 and Cara 45. Smell is identical to original Chimay,however upon tasting, i noticed that it doesn't have as much complexity and has some kind of tart note to it...

    Sweet Stout Deception Cream Stout

    I plan on making this soon, and have a packet of Windsor yeast that could potentially work for this ale. Did anyone use it in this recipe and what are the impressions? Im aware its a low attenuating yeast and plan on mash a little lower to compensate it.

    Brewed this recently and since i top cropped a nice amount of yeast from it, decided to brew an Achel 8 extra clone a week after, so my whole room smells of plums lol. i have two questions..on a first batch, 2 inch krausen still lingers on top, after 10 days, sitting at 25 C. Should I rouse it...

    One of them tasted little sour after bottling, but fermenter sample before bottling didnt.it was in orimary for 4 weeks. Also sourness decreased little over time. Im suspecting maybe something happened during bottling since it stayed a month in fermenter and showed no signs of infection.

    I tried using this yeast in a two Belgian pale ales, and yeast displayed weird behaviour. One was mashed hot other dry, gravity went from 1.50 to 1.011 in both occasions, but after bottling and priming around 2.5 Vol co2 i noticed gushers and heavy carbonation.upon measuring fg in bottles i saw...

    Yeah, i controlled the temperature, first two days at 18,9c, later let it selfrise to ambient which was 24,25c. Taste and smell are very very nice.caramelly malty.also all stepped up starters smelled ok, clovey mostly and had unusualy little trub.date on the bottle was 6 months old.

    I brewed this 13days ago,with yeast cultured from very fresh bottle of Rochefort 6 and stepped into 3lit starter for 4gal batch..i must say im astonished by hydrometer reading i did yesterday..it came from 1.078 to 1.003.that puts it around 9,9%abv,aroma and taste is nice and has that ethanol...
