    Is my sterilization overkill?

    I can't get behind using star San for bottles. I wash them with a bottle brush the run them thought the rinse cycle in the dishwasher.

    Yeah this same damn thing had been happening to me. My last red rye ipa was suppose to be only 1.060 but I hit 1.085. Not sure what's going on or if this is even a bad thing.

    Yeah 6 points off of OG? I'd leave that one alone. Funny thing for me is I have been exceeding my OG by a lot recently.

    It depends. Just because it hit the fg doesn't mean it's done. The yeast need to clean up or you'll have diceatyl. If it were me I'd rack to secondary to get it off the yeast cake and to allow all proteins to settle. Give it bout a week to make sure you have no butterscotch flavors then bottle...

    I have a glass circular pie pan, would that work? Im curious if the heat transfer to glass would still cause the bag to burn if resting on it.

    Yeah body will be a problem. I don't know that 8 cups will make a huge difference. I might would carb it with a bit more priming sugar than normal.
