    I used the RO for sanitizing water, and the water for priming sugar as well, with a half a campden tablet crushed in as I was so worried about it! The water from my RO water cooler still does not taste clear though, so I am guessing that is it. SUPER frustrating. Thanks for the quick reply.

    oh extra details- 5 gallon batches (3.5 gallon boil), with starters, extract with steeping grains. one was in primary for 3 weeks then bottled, one was in primary for 3 weeks then lagering for 2 weeks in the garage. I have been successful in the past using the same set up with store bought water.

    Haha - Just trying to learn as much as I can from the brewers who have been doing this for awhile! I think I will go with the kolsch recipe and tone down the hops to around 20ish IBUs, and take your advice to save a few bottles for when I can make the same recipe with the proper yeast. Thanks...

    mmb, as a member with over 20,000 posts, I will take your advice :) According to the brewers friend recipe calculator this recipe with the cream yeast will put me at almost 6% and 26 IBU's.
