I had a similar problem when I first set mine up. It took about 2 days for it to acclimate, now it holds a steady temperature without all the flip flop of going cool then heat then back to cool.

Great write up! For heat, I used a plain old fashioned heating pad. Works great, reaches desired temperature setting surprisingly fast.
Instead of wrapping the bulb with foil, line the inside of your cardboard box with it. I've done that in the past with great results as well.

Yes but it would take a little work. You would need to bypass the internal thermostat and let the temperature controller handle it that way. The one problem with this is on some models, if you "disable" the thermostat, this would also disable the anti frost/freeze switch. This would cause a...

Also, I don't think a 7cf chest freezer will be big enough. Maybe 3 kegs if you store co2 bottle outside. I don't see 3 kegs and a carboy fitting in there. Keep checking Craig's list, garage sales, estate sales. Can grab fairly nice chest freezers relatively cheap.
