    I think the mouth feel your talking about it is something other than water chemistry or hops. After trying to come up with my own version of this beer I found a few blog post, interviews etc.... that the culprit is pectin. Here is a link to something that might lead you on the right path...

    I sell for a distributor that has some of these said beers in the line up. It's unbelievable the lengths I've seen someone go through to get there hands on the "limited release" beers.

    Sorry to hear that. I know it seems I'm bashing the whole thing but it was a blast and there were some great breweries and beers represented. The little Cantillon demo i had the chance to taste was awesome for sure.
