I'm kind of at a loss for style for this beer that I made. It's really great and I want to enter it in competition.
The recipe/ingredients are as follows...
IBU's 77.96 (R)
SRM 8.4
OG 1.065
FG 1.020
15.5lbs Pale Malt
.75lbs Honey Malt
1oz Mosaic 60min

Well, I will do a test tonight. I will grab a new hydrometer on the way home from work and test it against the refractometer. I have never dropped it, but it was purchased online and who knows how it was handled before. I get funky readings from it all the time.
So I broke my hyrometer durring my brew session today, and my refractometer is giving me a OG of 1.073 or 17.8 brix but I was expecting around 1.065OG or 16Brix when all was said and done. I was taking measurements of my wort pre-boil and all were on track, last reading from both hyrometer and...
The grain bill was very straight. 14lb belg pils, 4oz aromatic malt, 3oz Belg Carmel Pils.
2.5LB's of sugar were added to the beer three days after fermentation started.
OG was 1.081. Just was shocked to see 1.001 as the FG.
So made a triple with the Wyeast 3789 Trappest Blend and the FG is 1.001. It tastes fine, though high alcohol, with a slight sourness, but I am thinking I should expect that from the Bret in the 3789. Any thoughts?
I added two different types of yeast nutrient to all the batches except the wild yeast batch. Both the Wyeast nutrient as well as some JD Carlson Yeast Nutrient.
