    The "Non-boil" issue on the Zymatic isn't really an issue at all. The Z boils at 207F but agitates the wort the entire time. DMS leaves the wort at 170F and either needs the agitation that the Zymatic has or needs the breaking of surface tension that a slightly higher heat boil would have...
